Butternut Squash Pithivier

For best results oven cook

Cooking time: 30 minutes

Fan oven at 180°C / electric oven at 200°C / gas mark 6

  1. Remove sleeve & film from the pithivier and set the cranberry & thyme jus to one side.
  2. Place the Butternut Squash Pithivier in the centre of the oven for 30 minutes (until golden brown)
  3. Once cooked, remove from the oven. Open the bag of cranberry & thyme jus and place the contents into a microwaveable container. Heat on full power for 20 seconds (900w). Stir halfway through the cooking time. Allow to stand for 1 minute before serving. Alternatively, decant into a small saucepan and bring to a simmer on a low heat.
  4. Serve the Butternut Squash Pithivier alongside a pot with the cranberry & thyme jus or drizzle the jus over the top.
