Roasted Monkfish

Tender toasted monkfish wrapped in bacon and served with spiced roasted squash and spinach sauce. Serves 1.

Fan oven at 180oC / electric oven at 200oC / gas mark 6

Pre-heat the oven. Remove the sleeve and film. Take out the sauce and fish. Place the container of the carrots & butternut squash onto a baking tray in the centre of the oven for 30 minutes. Meanwhile, fry the fish in a hot pan with a little oil until each side is a lovely golden colour, then add to the carrots in the oven for the last 10 minutes.

Top tip: If you don’t want to fry the fish: Remove the fish from the bag and place back in the container with the carrots and butternut squash (see tip below). Place contents onto a baking tray in the centre of oven for 20 minutes. Once cooked, remove the fish from the oven and leave to rest for a few minutes. Once rested, slice into three pieces.

Warning: The product will be hot, so please take care when removing from the oven. Do not re-heat. Leave to stand for 1-2 minutes before serving.

When the 30 minutes is nearly done, place the spinach sauce into a microwaveable container. Heat on full power (750w – 1 minute/ 850w – 40 seconds/ 1000w – 20 seconds). Stir halfway through the cooking time. Mix well and allow to stand for 1 minute. Alternatively, decant the contents into a small saucepan and warm on a low heat, stirring occasionally. Once it begins to bubble, the sauce is ready to serve.

Warning: Product will be hot. Take care when removing from microwave and when removing film. Ensure product is hot throughout. Do not re-heat more than once.

To serve, spread the spinach sauce onto the plate and add the carrots and the butternut squash. Place the monkfish on top of the vegetables and serve immediately.
