Flavoursome crayfish cocktail salad, served on pickled greens with baguettes.

Ingredients:

Crayfish (24%) (Crustacean), Brine (Water, Salt, Citric Acid E330, Preservative E202, E211. Ready to eat. (Wash the baby gem before use).

Slice the baguette and lightly toast the slices.

Cut off the end of the baby gem and separate all the leaves; wash leaves and set aside to dry. Plate two to three leaves of baby gem onto each plate and place the pickled vegetables in the centre of the plate. Add the capers to the crayfish in sauce and mix well.

Pile the crayfish in sauce on top of the pickled vegetables.  Serve with the toasted baguette slices.
